Ingredients

300g penne pasta

30g unsalted butter

2 slices bread

2tbsp olive oil

2 Butcher’s Selection Chicken Breasts, cut into 1cm cubes

1tbsp Asda Easy Garlic

200g pack Asda Light Original Soft Cheese

180g baby leaf spinach

3tbsp parsley, finely chopped

Zest 1 lemon

Method

Preheat the oven to 200C/180C Fan/Gas 6. Cook the pasta according to the pack instructions and drain, reserving 50ml of the water.

Spread ½ the butter on the bread and grill to toast. Heat the olive oil and the remaining butter in a large pan, then fry the chicken along with the garlic for 5-7 mins until the meat is cooked through.

Add the pasta and reserved pasta water to the pan with the chicken, then stir in the soft cheese, spinach, parsley, lemon zest and a good grind of black pepper. Toss well and serve with the toast grated or crumbled over.
