Ingredients

75g Flora Light spread

15g Asda Stevia Sweetener Granules

½tsp vanilla extract

175g self-raising flour, sifted

1 medium egg, beaten


2 balls stem ginger, finely chopped

Method

Preheat the oven to 190C/170C Fan/Gas 5. Line 2 baking trays with baking paper.

Stir together the Flora and Stevia until combined. Add the vanilla, flour and egg. Stir well until the mixture comes together to form 
a soft dough.

Stir the stem ginger into the cookie dough. Divide the dough into 15 pieces and arrange on the baking trays, well-spaced apart. Press down the top of each ball to flatten slightly.

Bake the cookies for 12-14 mins until pale golden brown. Leave on the baking trays to firm up for 5 mins, then lift onto a wire rack to allow them to cool completely.
