Ingredients

4 sheets (75g) Asda Ready Rolled Filo Pastry

125g chopped leafy greens such as Kale or Cavolo Nero, stalks removed

1 tbsp Vegetable Oil

2 Garlic cloves, crushed

½ Lemon, juice only

500g cooked Root Vegetables, such as carrots, parsnips and swede, cut into 2cm cubes

200g Blue Cheese, crumbled

30g Unsalted Butter, melted

1 Egg, beaten, to glaze

1 tsp Poppy seeds

1 tsp Sesame seeds

Remove the packet of filo pastry from the fridge 2 hrs before using.

Place the leafy greens in a colander, wash and drain slightly. Heat the oil in a large frying pan over a medium heat, add the garlic and fry for 1 min. Add the greens with the water still clinging to the leaves. Add a pinch of salt and stir-fry for 2 mins, then add the lemon juice and fry for 30 secs more. Transfer to a plate lined with kitchen paper and allow to steam dry and cool.

When cool, gently squeeze the leafy greens to remove any excess water. In a bowl, lightly mash together the cooked root veg, blue cheese and greens to make the filling. Preheat the oven to 180ºC/160ºC fan/gas 5 and line a tray with a piece of baking paper.

When ready to assemble, take the filo pastry out of the packet and lay the sheets between two clean, slightly damp tea towels. Keep the pile of pastry sheets covered as you work. Remove the first sheet and place it with the longest edge in front of you. Brush with melted butter, then place another sheet on top. Repeat for all the pastry sheets.

Allow the strudel to sit for at least 10 mins before slicing with a serrated knife. Serve with salad and red cabbage slaw, if making.
