Ingredients

6 eating apples, stalks removed

450g demerara sugar

50g unsalted butter

2tsp cider vinegar

1tbsp golden syrup

Cake Décor Gold or Silver Glitter Spray

6 cake pop sticks or wooden lolly sticks

Method

Push a cake pop or lolly stick halfway into each of the apples at the stalk end. Set aside. Put a small bowl of cold water in the fridge to chill.

Heat the demerara sugar and 150ml water in a pan over a low setting, stirring, until the sugar dissolves.

Add the butter, cider vinegar and golden syrup to the pan. Turn up the heat and boil for 10 mins, without stirring, until it turns to toffee. Use a sugar thermometer to check if it’s ready – it should be 140C. Or drop a blob into the bowl of chilled water – it should turn hard. If it’s not done, boil for 2 mins more, then test again. Repeat as necessary.

Holding the apples by the sticks, carefully dip them in the toffee, tilting the pan slightly and turning to coat them all over. Put on a lined baking tray and allow them to cool and set completely.

Spritz some glitter spray on each apple shortly before serving.
