Ingredients

1 onion, chopped

1 clove garlic, peeled

15g parsley

10g coriander, plus extra to serve

1tbsp lemon juice

200g frozen peas, defrosted

400g can chickpeas, drained and rinsed

1tsp ground cumin

60g plain flour

1tbsp rapeseed oil

1tbsp tahini paste

100g fat-free natural yogurt

4 Asda Flatbreads

2 Little Gem lettuce

3 tomatoes, sliced

½ cucumber, sliced

Method

Pulse the onion, garlic, parsley and coriander in a food processor until chopped. Add the lemon juice, peas and chickpeas. Blitz until the mixture comes together but is still chunky. Add the cumin and flour. Shape into 12 small round patties.

Heat some of the oil in a nonstick pan and cook the patties in batches for 3-4 minutes each side until golden.

Mix the tahini and yogurt and spoon into warmed flatbreads. Top with the lettuce, tomatoes, cucumber, the falafels and more coriander to serve.
