Ingredients

225ml Semi-Skimmed Milk

1 large Egg

8 Sundried Tomatoes, chopped, plus 4 tbsp oil from the jar

100g Ham, chopped

275g Self-Raising Flour

1 tsp Baking Powder

80g Asda 50% Less Fat Mature Cheddar Cheese, grated

1 tbsp fresh Chives, chopped

Method

Preheat the oven to 180ºC/160ºC fan/gas 4. Line a muffin tray with 12 paper muffin cases.

In a jug, gently beat the milk, egg and oil from the sundried tomato jar and set aside.

Put the sundried tomatoes in a large bowl with the ham. Add the flour, baking powder and cheese, followed by the milk and egg mixture along with the chives. Season with salt and pepper and mix until just combined.

Divide between the muffin cases and bake for 25 mins until risen and golden. Cool slightly and remove from the tin. Serve muffins warm or cold.

Cook’s tip: For a little heat, mix a good pinch of mustard powder or a shake of cayenne pepper into the egg mixture.
