Ingredients

2 sweet potatoes, washed and cut into thin slices

1tsp ground cumin

1tsp rapeseed oil

Flesh of 1 ripe avocado

Juice ½ lime

1tbsp fresh coriander, finely chopped

Method

Preheat the oven to 100C/80C Fan/Gas 1-2. Line a baking tray with baking paper.

Stamp out pumpkin shapes from the sweet potato (use Asda’s pumpkin-shaped cookie cutter or a sharp knife). Put on the baking tray, sprinkle with cumin and drizzle with oil. Bake for 40-50 mins until crisp.

Meanwhile, to make the guacamole, put the avocado, lime juice and coriander in a food processor and blend until smooth. Season with freshly ground black pepper and serve with the sweet potato crisps.
