Ingredients

4 Asda Butcher’s Selection chicken leg quarters, skin and excess fat removed

½ lemon, juiced

2 garlic cloves, crushed

1 red onion, thinly sliced

2 carrots, peeled and roughly chopped

6 sprigs fresh thyme, leaves picked

1 spring onion, thinly sliced

¼ scotch bonnet, thinly sliced (optional)

1tsp rapeseed oil

1 reduced salt chicken stock cube (dairy free, if required), dissolved in 500ml boiling water

30g fresh breadcrumbs

In a bowl, add the chicken, lemon, garlic, red onion, carrots, thyme, spring onion and scotch bonnet (if using). Mix together and leave to marinade in the fridge for at least 20 mins or ideally overnight.

Remove the chicken pieces from the marinade mix. Add the oil to a large frying pan over a medium-high heat and fry the chicken pieces for 8-10 minutes until golden. Set the chicken aside, then add the marinated vegetables and fry for 1-2 minutes until they start to soften.

Return the chicken to the pan and pour in the stock. Bring to the boil and simmer for 35-40 minutes until the chicken is cooked through and tender.

In a separate pan, dry fry the breadcrumbs over a medium heat for 3-4 minutes, until golden. Sprinkle them over the cooked chicken and cook for a further 5 minutes before serving.
