Ingredients

6 leaves gelatine

570ml Asda No Added Sugar Sparkling Strawberry & Vanilla Flavour Water

¼ watermelon

¼ cantaloupe melon

¼ honeydew melon

Method

Soak the gelatine in cold water for 5 mins until soft.

Pour a quarter of the sparkling water into a pan and warm over a medium heat until it begins to steam.

Remove from the heat. Squeeze the excess water from the gelatine and put in the pan.

Stir gently until the gelatine has dissolved. Gradually add the rest of the sparkling water, stirring, until there are no lumps.

Pour the jelly into 8 small jars or glasses and leave in the fridge to chill while you prepare the melon balls.

Curl all the melon into small balls using a melon baller or teaspoon. Put on a plate lined with kitchen paper to absorb any excess juice.

As the jelly starts to set, gradually add melon balls to each jar a couple at a time, pushing them down through the jelly.

Return to the fridge and leave to set a little more, then add more melon balls until evenly dispersed through the jars. Chill in the fridge until the jelly is fully set.
