Ingredients

50g sultanas

1tbsp Cointreau

200g porridge oats

1tsp ground cinnamon

½tsp nutmeg

1tsp ground ginger

1 orange, zest only

1 lemon, zest only

500ml semi-skimmed milk

500ml water

3tbsp brown sugar

3tbsp Greek yoghurt

3tbsp brown sugar

3tbsp toasted flaked almonds

Method

Soak the sultanas in Cointreau, cover and leave overnight.

In a medium saucepan mix the oats, spices, lemon and orange zest, milk and water. Cover with cling film and refrigerate overnight.

Strain the sultanas, reserving the Cointreau, and add them to the oats.

Gradually warm the porridge over a medium heat, stirring continuously, until it thickens and starts to bubble. Leave for 2-3mins then divide between 6 bowls.

Mix the Cointreau through the Greek Yoghurt, divide between the bowls and sprinkle with brown sugar and almonds.
