Ingredients

200g pack Asda 50% Less Fat Light Original Soft Cheese

1tsp vanilla extract

397g can condensed milk

4 mince pies, chopped, plus 2 extra to serve

300ml fresh whipping cream

Method

Mix together the soft cheese and vanilla with an electric whisk until thick and creamy.

Add the condensed milk to the mixture, then whisk for 2-3 mins until thickened. Add the chopped mince pies and stir to just combine.

In a separate bowl, whip the cream until soft peaks form, then fold into the soft cheese mixture to combine.

Pour the ice cream mixture into a lidded freezer proof container then even out the top. Cover with the lid and freeze for at least 6 hrs, preferably overnight.

To serve, scoop the ice cream into glasses and top with pieces of the extra mince pies.
