Ingredients

1 tbsp rapeseed oil

600g Asda Frozen Mixed Vegetables

3cm piece root ginger

2 red onions

1 green chilli

1 tsp turmeric

6 cardamom pods

20g sultanas

2 tbsp Balti curry paste

300g basmati rice

1 reduced-salt vegetable stock cube

3 spring onions

2 tbsp chopped coriander

2 tbsp toasted almonds

Method

Heat 1tbsp rapeseed oil in a large pan.

Add 600g Asda Frozen Mixed Vegetables, a 3cm piece root ginger, finely grated, 2 red onions, sliced, 1 green chilli, deseeded and finely chopped, 1tsp turmeric, 6 cardamom pods, cracked, and 20g sultanas.

Cook for 5 mins until the onions are softened but not browned.

Stir through 2tbsp Balti curry paste, 300g basmati rice and 1 reduced-salt vegetable stock cube. Top up with 800ml boiling water.

Stir to combine, cover with a tight-fitting lid, bring to the boil then simmer gently for 5 mins.

Turn off the heat and leave to stand, covered, for 20 mins.

Remove the lid and use a fork to stir up the rice grains, then mix through 3 spring onions, finely sliced.

Garnish with 2tbsp chopped coriander and 2tbsp toasted almonds, then serve immediately.
