Ingredients

500g frozen Peas

50g salted Cashews

17.5ml of Lemon juice, plus wedges to serve

30g of fresh Basil

50g Hard Cheese, finely grated & some to serve

350g Pasta Shapes

Method

Cook your peas according to packet instructions in boiling water. Drain and set aside.

Add around ¼ of the peas to a food processor along with the salted cashews, lemon juice and fresh basil. Roughly blend, then add the hard cheese and blend again. Season with lots of black pepper.

Meanwhile, cook your pasta in boiling water. Set your timer to the packet time minus one minute.

Before you drain the pasta, reserve 300ml of pasta water. Add the drained pasta and extra peas back into the pan along with the pea pesto.

Pour around 200ml of the pasta water into the pan and cook on a low heat, whilst continuously stirring until the pesto loosens into a nice glossy sauce. If necessary, add more pasta water.

Serve with an extra sprinkle of cheese and a crack of black pepper. Enjoy!
