Ingredients

2 Grower’s Selection Ready To Eat Peaches, halved and destoned

150g asparagus, trimmed

1tsp rapeseed oil

2tbsp pine nuts

225g Asda 40% Less Fat Halloumi, sliced

100g baby spinach

½ pack salad cress

1tbsp pomegranate sauce

Method

Preheat the oven to 200C/180C Fan/Gas 6. Arrange the peach halves on a baking tray with the asparagus, drizzle with the oil and cook for 12 mins. Add the pine nuts to the tray after 9 mins.

Heat a nonstick frying pan on high, then dry-fry the halloumi for 1-2 mins on each side until golden

Add the halloumi to the spinach and cress, and mix in the peaches, asparagus and pine nuts. Drizzle with the pomegranate sauce, season with a sprinkle of black pepper and serve.
