Ingredients
175g plain flour
50g caster sugar, plus 1tbsp extra
65g butter, diced
100g soft cheese
1tbsp milk
600g blackberries
2tbsp cornflour
3tbsp soft light brown sugar
1 egg white, beaten
Method
1In a processor, whizz the flour, 50g caster sugar and butter until the mixture resembles breadcrumbs. Add the soft cheese and milk then whizz to a dough. Wrap in foil, then chill for 30 mins. Preheat your oven to 200C/180C Fan/Gas 6.
2Cut the dough into 6. On a lightly floured surface, roll each piece into a 15cm circle. Mix the berries, cornflour and brown sugar, then divide between the pastry circles.
3Brush the edges with egg white and draw up the sides. Lift onto a greased, floured baking sheet, brush with egg white, sprinkle with the extra caster sugar and bake for 20 mins until golden.
