Ingredients

1 tsp vegetable oil

8-pack Just Essentials by Asda Pork Sausages

1 onion, chopped

600ml stock, made with 1 vegetable stock cube

400g tin Asda Chopped Tomatoes with Garlic in Tomato Juice

6 tbsp tomato purée

390g tin Asda Green Lentils in Water, drained

500g Asda Creamy & Flavoursome Sweet Potatoes, peeled and cut into roughly 4cm chunks

10g Asda Mild & Peppery Flat Leaf Parsley, chopped

Method

Heat the vegetable oil in a large saucepan and cook the sausages over a medium heat for 7–8 mins, until golden and cooked through. Remove from the pan and set aside.

Reduce the heat and cook the chopped onion for 5–6 mins until softened, stirring occasionally.

Add the stock, chopped tomatoes, tomato purée, lentils and sweet potatoes. Bring to a simmer and cook uncovered for 17 mins or until the sweet potatoes are tender. If you want a thicker stew, you can mash a few of the potato chunks to add sweetness and body.

Slice the sausages and return them to the pan along with half the parsley. Season with salt and black pepper and simmer for a further 5 mins.

Serve straight away with a scattering of the remaining parsley.
