Ingredients

½ tbsp olive oil

6 Asda Flavoursome 6 Smoked Streaky Bacon Rashers, roughly choppe

1 white onion, finely chopped

2 garlic cloves, finely chopped

2 tsp smoked paprika

1 tsp cumin seeds

1 tbsp Asda Classic BBQ Sauce

500g passata

400g tin Asda Mexican Style Bean Mix in Water

400g tin butter beans

4 baking potatoes

4 tbsp soured cream, optional

chopped chives, optional

Method

Heat the olive oil in a large, ovenproof casserole pan over a medium heat. Fry the bacon for 5 mins, until crisp. Add the onion and cook for a further 6 mins, stirring regularly until caramelised.

Add the garlic, smoked paprika and cumin seeds and cook for another 2 mins, until toasted. Add the barbecue sauce, passata and beans (including the water in the tin), turn up the heat and bring to a simmer. You can mix it up by choosing different varieties of beans like haricot, pinto, red kidney or butter beans.

Reduce the heat to low and cook for 45 mins until thickened and reduced, stirring occasionally (add a splash of water to loosen if needed). Season the beans to taste with salt and pepper.

Meanwhile, prick the potatoes all over with a fork and cook in the microwave for 8–12 mins (depending on the size), turning halfway. If you like, finish them in the oven at 220°C/200°C fan/gas 7 for 10–15 mins for extra crispy skin.

Slice open the potatoes and spoon over the smoky cowboy beans. Finish off with the soured cream and scatter with the chopped chives, if using. You can also garnish with sliced, fresh red chilli or dried chilli flakes for an extra spicy kick.
