Ingredients

800g Asda salmon side

4tbsp Extra Special Jalapeño Chilli Jam

½tsp ground coriander

½tsp ground cumin

400g pack red grapes, separated into small bunches

3 small lemons, halved

1tbsp rapeseed oil

1 small pomegranate, roughly broken into chunks, some seeds removed

½ x 30g pack mint, leaves picked

Method

Preheat the oven to 220C/200C Fan/Gas 7.

Lay the salmon on a large, shallow ovenproof dish. Mix the chilli jam, coriander and cumin together to combine, then spread over the fish.

Surround the salmon with the grapes and lemon halves, drizzle over the oil, then roast for 20-25 mins until the fish begins to flake and the grapes are wrinkled and ready to burst.

Serve garnished with the pomegranate pieces, as well as a scattering of the seeds, plus the mint leaves.
