Ingredients

350g leftover mixed roasted veg, roughly chopped

215g pot Asda Hot & Spicy Salsa

3tbsp chopped coriander  

8 Asda Corn Tortillas 

100g Asda 30% Less Fat Mature British Cheese, grated 

50g Asda Guacamole, to serve

Method

Mix together the roasted veg, salsa and chopped coriander in a large bowl.

Put 4 tortillas on a clean, flat surface and sprinkle over half the cheese, dividing it evenly between them. Top with the veg mixture and sprinkle over the remaining grated cheese. Top each tortilla with another one to make a quesadilla, and press down gently with your hand.

Dry-fry the quesadillas, one at a time, in a griddle pan or large nonstick frying pan on a low heat for 2-3 mins on each side, until golden and the cheese has melted.

Arrange the quesadillas in a stack and cut it into quarters, like slicing a cake. Serve immediately, with the guacamole on the side.
