Ingredients

2 medium bananas, peeled

4tbsp coconut oil, melted

80g light brown sugar

2 large eggs, beaten

1tsp vanilla extract

1tsp cinnamon

3 Weetabix biscuits, crumbled

175g self-raising flour

½tsp bicarbonate of soda

Method

Preheat the oven to 200C/180C Fan/Gas 6. Line a standard 1L loaf tin with baking paper.

In a large bowl, mash the bananas until smooth. Stir in the melted coconut oil, the sugar, eggs and vanilla extract until combined.

Mix in the cinnamon, crumbled Weetabix, flour and bicarb until it forms a thick mixture.

Pour into the prepared tin and bake for 40-45 mins, until the top is a deep golden brown and a skewer inserted into the middle comes out clean.

Allow to cool in the tin for 15 mins, then turn out and peel off the baking paper. Cool completely on a wire rack before slicing to serve.
