Ingredients

1 whole red cabbage (1kg)

25g butter, softened

Zest 1 orange

450ml dry cider

30g soft brown sugar

50ml balsamic vinegar

1 heaped tsp mixed spice

1 star anise

4 cardamom pods, bashed

2 bay leaves, plus extra to garnish

2 ripe but firm pears, peeled and grated

1 red onion, sliced

1 clove garlic, chopped

20g dried cranberries

Preheat the oven to 200C/180C Fan/Gas 6.

Cut 2cm off the bottom of the cabbage. Stand in a 26cm-deep round ovenproof dish. Mix the butter and zest and spread over the cabbage.

In a large jug, mix together the remaining ingredients and pour around the cabbage. Cover the dish securely with foil and cook in the oven for 1 hr 30 mins, uncovering for the last 30 mins of cooking.

Serve the cabbage whole or alternatively slice into wedges, with the onion mixture arranged over. Then garnish with the bay leaves.
