Ingredients

1 Aubergine, sliced into 4 planks

2 Pak choi

250g Asda Egg Noodles

1bunch of Coriander

40g Fresh ginger

4 Garlic cloves, finely chopped

150ml Dark Soy Sauce

2 Stock cubes

1.5 tbsp olive oil

Ground Black pepper

Method

Preheat oven to 180°C Fan. Place the aubergine planks onto a foil lined baking tray. Combine 1 tbsp of the soy sauce with the honey and ½ tbsp of olive oil. Coat both sides of the aubergine with the sticky soy sauce and pop in the oven for 25-30 minutes.

After 10 minutes, add the remaining olive oil into a large saucepan along with the ginger, garlic and coriander stems. Fry on a medium heat for a couple of minutes until fragrant, season with black pepper.

Next, add the stock, soy sauce, noodles and pak choi into the pan. Reduce the heat to a low simmer and cover with a lid.

After around 3 minutes, remove the lid and stir. Pop the lid back on and cook for another 3 minutes.

When the aubergine is caramalised and tender, slice into diagonal strips for an aesthetic ramen look.

Serve a portion of the ramen with the aubergine and top with a sprinkle of coriander and black pepper.
