Ingredients

115g butter, softened

75g granulated sugar

Pinch salt

1/2 tsp vanilla extract

1 egg yolk

240g plain flour

1 pint semi-skimmed milk

1 pint apple juice

2 large ripe bananas

1 tbsp lemon juice

150g blueberries

Blue food colouring (optional)

Method

Beat the butter, sugar, salt and vanilla together until soft anf fluffy. Mix in the egg yolk. Add the flour and mix well.Spoon onto a sheet of cling film and shape into a 20 x 5cm log. Wrap well and chill for 30 mins.

Preheat the oven to 200C/180C Fan/Gas 6 and line 2 baking sheets with parchment.

Cut the cookie log into 16-18 slices and arrange on lined baking sheets well spaced apart. Cook for 10-12 mins until just starting to go golden round the edges. Lift onto a cooling rack and leave to cool.

Put all the remaining ingredients in a blender and blend until smooth and frothy. Divide between 8 glasses and serve with cookies.
