Ingredients

500g Farm Stores Cherry Tomatoes, halved

2 Grower’s Selection Courgettes, sliced lengthways into thin strips

280g Asda Spirali pasta

Juice ½ Grower’s Selection Loose Lemon

1tsp dried oregano

1 clove garlic, finely chopped then squashed with a fork to a paste

1 ball Asda Mozzarella, drained and cut into small cubes

Bunch fresh basil, torn

3tbsp extra virgin olive oil

1tbsp rapeseed oil

Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with foil.

Arrange the halved tomatoes on the baking tray with 1tbsp of the olive oil and season with black pepper. Pop in the oven for 30 mins, then set aside to cool.

Meanwhile, add the rapeseed oil to a griddle pan or large frying pan, and heat on high. In batches, put the courgette strips in the pan and cook on each side for 2-3 mins, or until slightly charred. Set aside on a plate to cool.

Add the pasta to a pan of boiling water and cook for 12 mins until tender but with a bite in the middle. Rinse in water until cold, then drain.

In a large mixing bowl, whisk together the remaining olive oil with the lemon juice, oregano and garlic. Season with a pinch of black pepper. Add the drained pasta and stir to combine.

Slice the charred courgettes into bite-sized pieces. Stir into the pasta with the roasted tomatoes, mozzarella cubes and basil. Season with a little extra pepper and serve.
