Ingredients

2 red chillies,

2 cloves garlic

4tbsp chopped parsley

1 red onion

2tsp dried oregano

150ml red wine vinegar

125ml olive oil

4tbsp lime juice

500g Jersey Royals

Method

For the chimichurri sauce, mix 2 red chillies, deseeded and chopped, 2 garlic cloves, crushed, 4tbsp chopped parsley, 1 red onion, chopped, 2tsp dried oregano, 150ml red wine vinegar, 125ml olive oil and 4tbsp lime juice in a bowl. Chill, covered, for 2hrs.

Boil 500g Jersey Royals, for 10-15mins, until tender and drain. Toss with the sauce while hot. Serve when cooled.
