4 dried apricots, diced

1tbsp fat-free Greek-style yogurt

3tbsp light mayonnaise

½tsp mild curry powder

2tbsp mango chutney

¼ red pepper, deseeded and chopped

140g Asda Classic Chicken Breast Slices, chopped

8 slices Extra Special Malted Farmhouse Loaf

50g Asda Spreadable with Real Butter spread

Rocket leaves, to garnish

Method

Mix the apricots, yogurt, mayonnaise and curry powder. Stir in the chutney, red pepper and chicken.

Make 4 sandwiches with the bread, the spread and the chicken curry filling.

Cut off the crusts; slice each sandwich into 3. Serve garnished with the rocket.
