Ingredients

500g pack Asda White Bread Mix

250g butternut squash

1 red onion

1tbsp rapeseed oil

80g baby spinach

4tbsp Napolina Tomato Sauce with Herbs Pizza Topping

125g Asda Light Mozzarella

20g grated Parmesan

1 egg

½tsp chilli flakes

Pepper to serve

Method

1
Make up a 500g pack Asda White Bread Mix, and prove for 30-40 mins.
2
Meanwhile, bring a pan of water to a boil, add 250g butternut squash, cubed, and blanch for 3-4 mins until just tender. Remove and drain on kitchen roll before placing in a bowl with 1 red onion, sliced, and 1tbsp rapeseed oil. Mix and set aside.
3
Cook 80g baby spinach according to the packet instructions and squeeze out excess liquid.
4
Preheat the oven to 250C/230C Fan/Gas 9.
5
Knead the dough on a lightly floured surface for 1 min. Divide in half then use your hands or a rolling pin to shape into 2 pizza bases about 15mm thick. Transfer to a baking sheet.
6
Spread 4tbsp Napolina Tomato Sauce with Herbs Pizza Topping on each base.
7
Top with the spinach and squash, plus 125g Asda Light Mozzarella, torn, and 20g grated Parmesan, leaving the centre of each pizza clear.
8
Crack 1 egg into each space. Sprinkle ½tsp chilli flakes on each pizza and bake for 7-10 mins until the cheese melts and the egg white is set.
9
Season with pepper and serve.
