Ingredients

Mince

1tbsp olive oil

1kg Asda lean beef mince 5% fat

2 onions, finely chopped

3 carrots, chopped

2tsp Very Lazy Garlic in White Wine Vinegar

3tbsp plain flour

1tbsp tomato purée

2 reduced salt beef stock cubes, made up to 1l

2tsp Worcestershire sauce

2 bay leaves

Mash

1.8kg potatoes chopped

225ml semi-skimmed milk

15g unsalted butter

100g 30% less fat grated cheese

Method

Heat 1 tsp of the oil in pan and fry the beef mince until browned. You may need to do this in batches. Set aside as it browns.

Put the other 2 tsp of oil into the pan, add the onions and carrots and cook for about 20 minutes on a gentle heat until soft, adding a splash of water if sticking to the pan.

Add the garlic, flour and tomato purée, increase the heat and cook for a few minutes, then return the beef to the pan. Pour over the stock, Worcestershire sauce and add the bay leaves. Bring to a simmer and cook, uncovered, for 45 minutes. By this time the gravy should be thick and coating the meat. Check after about 30 minutes – if a lot of liquid remains, increase the heat slightly to reduce the gravy a little. Season well, then discard the bay leaves.

Meanwhile, make the mash. In a large saucepan, cover the potatoes in cold water, bring to the boil and simmer until tender. Drain and mash with the milk, butter and three-quarters of the cheese, then season with pepper.

Spoon the meat into a large dish. spoon on the mash to cover and even out with a fork. Sprinkle on the remaining cheese.

If eating straight away, heat oven to 220c/fan 200c/gas mark 7 and cook for 25-30 mins, or until the topping is golden. If freezing, you can do this now and cook when ready to eat.
