Ingredients

15g Butter

2 x 480g packs Asda Shredded Red Cabbage

1 Red Onion, thinly sliced

250ml Asda Mulled Wine

2 red Apples, such as Royal Gala, cored and thinly sliced

2 Star Anise

1 Cinnamon stick

2 Bay Leaves

Pinch of freshly grated Nutmeg

6 Cloves

4tbsp Red Wine Vinegar

30g Soft Light Brown Sugar

Method

Heat the butter in a large saucepan over medium heat. Once melted add the red cabbage and onion, season with salt and black pepper and cook, stirring regularly, until starting to soften, 8-10 mins. To make this vegan, swap the butter for 1tbsp vegetable oil or 15g dairy free spread.

Add the remaining ingredients with 100ml water, season with salt and pepper and bring to a simmer. Cover with a lid, reduce the heat to medium low and cook for 15 mins, then remove the lid and cook for a further 30-35 mins until the cabbage and apple are cooked through and the liquid has reduced. Remove the star anise, cinnamon stick, bay leaves and cloves before serving.

Make up to 2 days before serving and keep in an airtight container in the fridge. This cabbage also freezes really well in an airtight container for up to 3 months. Defrost overnight in the fridge before reheating until piping hot, you may need to add a splash of water. It will defrost faster if stored in a few smaller, shallower containers rather than one large one.
