Ingredients

400g frozen peas

50g plain flour

50g Parmesan, grated

100g Chosen by you Mozzarella Soft & Mild Grated Cheese

2 spring onions, trimmed and sliced

3tbsp chopped fresh parsley

3tbsp chopped fresh basil

1 large egg, beaten

4tbsp olive oil

4 eggs, poached

Method

Simmer the peas in a large pan of boiling water for 5 mins. Drain and cool. Mash the peas with a fork or potato masher.

Add the flour, Parmesan, mozzarella, spring onions, herbs and egg to the peas and mix well. Shape into 12 patties.

Heat a little of the oil in a pan and fry the fritters in batches until golden. Drain on kitchen paper.

Stack 4 fritters per portion on warm plates and serve with a poached egg on top of each.
