Ingredients

20g unsalted butter

3tbsp caster sugar

300g plums, halved and stoned

3 eggs

300ml semi-skimmed milk

75g plain flour

1tsp vanilla extract

½tsp cinnamon

2tbsp icing sugar, plus a little extra, to serve

Method

Preheat the oven to 180C/ 160C Fan/Gas 4.

Grease a 1L shallow dish with the butter.

Sprinkle 1tbsp caster sugar in the base, arrange the plums on it, cut-side down, and sprinkle with the remaining sugar.

Beat together all the remaining ingredients until smooth. Strain through a sieve over the fruit, pressing any lumps through with the back of a spoon. Leave to rest for 15 mins.

Bake for 45-50 mins until firm, well-risen and golden brown.

Leave to stand for 5 mins, dust lightly with icing sugar and serve warm.
