Ingredients

100g leftover salad (we used Asda Watercress, Spinach & Rocket Salad)

10g fresh basil or any leftover leafy herbs

120ml rapeseed oil

1 garlic clove

1 lemon, juiced and zested plus extra to serve

30g parmesan, grated

70g chopped mixed nuts

Method

Add all the ingredients into a food processor and whizz until nearly smooth, but still slightly coarse. Serve with extra drizzle of oil, pepper and extra zest of lemon.
