Ingredients
1 pack Asda Butcher’s Selection lamb chops (4 chops in a pack)
1tsp olive oil
1 romaine lettuce
250ml beef stock
200g frozen peas
1 small bunch fresh mint
15g butter
Method
1Season the lamb chops and place on a tray under a hot grill for 4 to 5 minutes.
2Meanwhile cut the romaine lettuce into quarters lengthways. Drizzle the oil into a large hot frying pan and sear the lettuce until charred.
3Add the stock and mint, bring to the boil and reduce by half.
4Add the butter, season and reduce by half again. Serve with the lamb chops.
