Ingredients

1 pack Asda Butcher’s Selection lamb chops (4 chops in a pack)

1tsp olive oil

1 romaine lettuce

250ml beef stock

200g frozen peas

1 small bunch fresh mint

15g butter

Method

Season the lamb chops and place on a tray under a hot grill for 4 to 5 minutes.

Meanwhile cut the romaine lettuce into quarters lengthways. Drizzle the oil into a large hot frying pan and sear the lettuce until charred.

Add the stock and mint, bring to the boil and reduce by half.

Add the butter, season and reduce by half again. Serve with the lamb chops.
