Ingredients

3 Red Onions, sliced

2 tsp Vegetable Oil

1 tsp Mango Chutney, for the onions

1 x 6 Asda OMV! No Pork Chilli Sausages

6 Hot Dog Buns

50g Mango Chutney

15g fresh Coriander, chopped

10g Mini Poppadoms, crushed

1 Red Chilli, deseeded and sliced

15g fresh Coriander

75g Dairy-free Coconut Yoghurt

Method

Put the sliced onions in a microwave-safe bowl and add the oil. Heat in the microwave on full power for 2 mins. Stir then return to the microwave for a further 2 mins. The onions should now be quite tender, so transfer to a saucepan with 1 tsp mango chutney and cook on a medium heat for around 8–9 mins until really soft and sticky. Season and keep warm.

Meanwhile, as the onions are cooking down, cook the sausages according to the pack instructions.

When you’re almost ready to serve, make the sauce by blending together the coriander and coconut yoghurt until smooth, then season.

To serve, warm up the hot dog buns (you can do this in the microwave for 20–30 secs). Load up the buns with a spoonful of mango chutney, the caramelised onions, fresh coriander, a drizzle of the coriander sauce, some crushed poppadum's and a few slices of red chilli. Serve with any leftover coriander sauce and mango chutney on the side for dipping.
