Ingredients

150g dried stoned dates

4 tbsp dark rum (or orange juice)

150g very ripe banana (peeled weight)

125g Asda Unsalted Butter, softened

125g caster sugar

1 small orange, zest of

2 large free-range eggs

175g self-raising flour

Method

Pre-heat the oven to 180C/160C Fan/Gas 4. Line a deep 18cm square cake tin.

Cut each date into four pieces using kitchen scissors. Put in a small pan with the dark rum or orange juice and heat gently until it comes to the boil. Turn off the heat and leave until cool.

Mash the banana in a bowl with a fork and set aside. Beat the butter, sugar and orange zest until light and creamy. Beat in the eggs, one at a time, adding 1 level tbsp self-raising flour with each one. Stir in the rest of the flour, the prepared dates and mashed banana.

Put the mixture in the lined cake tin, level the top and bake in the oven for 50-55 minutes or till the top springs back when lightly pressed.
