Ingredients

3 Asda Extra Special Free Range Golden Yolk Eggs

75g Parmesan, finely grated, plus extra for serving

350g spaghetti

1 tbsp olive oil

160g Asda Diced Smoked Pancetta

1 small garlic clove, finely chopped

Method

Beat the eggs in a bowl with the Parmesan and a pinch of black pepper.

Cook the spaghetti according to packet instructions, reserving a cup of pasta water when draining.

Meanwhile, heat the olive oil in a large frying pan over a medium heat, add the diced pancetta and fry for 4–5 mins, until golden and the fat has rendered. Then add the chopped garlic and cook for a further min.

Add the cooked pasta into the pan with the pancetta and mix well, then remove from the heat.

Tip the egg mixture into the spaghetti with a few tablespoons of pasta water, stirring continuously for about a min. Serve immediately with more grated Parmesan.
