Ingredients

2 small mangoes, peeled, stoned and cubed

2 tsp lime juice

5 tbsp mango juice drink

400ml coconut milk

2 level tsp icing sugar

Method

Purée the mangoes with the lime juice and mango drink. Spoon into an ice-cube-tray to fill halfway up, then freeze until solid.

Mix the coconut milk with the sugar. Pour over the mango and freeze again.
