Ingredients

2 x 500g packs Asda Scoop & Bake Vanilla Flavour Cake Mix

20g poppy seeds, plus extra to decorate (optional)

Zest 1 orange and 1-2tbsp juice, plus extra zest to decorate (optional)

100g unsalted butter, softened

150g icing sugar

200g soft cheese, at room temperature

Method

Preheat the oven to 180C/160C Fan/Gas 4. Grease and line the base of 2 x 20cm round cake tins.

Scoop both packs of the cake mix into a large bowl, then stir through the poppy seeds and zest. Spoon into the tins.

Bake for 23-26 minutes, or until well risen and springy to the touch. Cool the cakes in the tins for 10 minutes, then turn out onto a wire rack and allow to cool completely.

For the buttercream icing, beat the butter with the icing sugar in a bowl until very soft and fluffy. Add the orange juice and beat until well combined. Stir the soft cheese to loosen, then beat into the buttercream until just combined. Take care not to overmix, as the mixture will become runny.

Put the first sponge upside-down on a cake stand or plate, then spread the flat base with ½ the icing. Sandwich with the other sponge, then spread the top of that with the remaining icing.

Sprinkle over a little extra orange zest and some more poppy seeds to decorate, if you like.

Slice into 12 pieces to serve.
