Ingredients

4 Grower’s Selection Vine Ripened Tomatoes

250g pack Extra Special Hand Picked Aromatico Tomatoes

1tbsp rapeseed oil

1tsp dried oregano

1tbsp red wine vinegar

1tbsp caster sugar

375g sheet Asda Ready Rolled Puff Pastry

½ x 25g pack basil leaves

Method

1
Preheat the oven to 200C/180C Fan/Gas 6.
2
Cut the vine tomatoes and Aromatico tomatoes into halves. Scoop out the seeds and discard.
3
Put the tomato halves in a bowl with the oil and oregano. Toss gently to coat.
4
Arrange the tomatoes, cut side up, in a 23cm nonstick ovenproof frying pan – space the larger ones out evenly, then fill in the gaps with the small ones. Cook over a medium heat for 8 mins or until slightly softened.
5
Mix together the vinegar and caster sugar then drizzle over the tomatoes. Top with the pastry and trim as necessary.
6
Bake for 40 mins until the pastry is golden.
7
Sprinkle with basil leaves and black pepper to serve.
