1 tsp vegetable oil
500g Asda Succulent Boneless Chicken Thigh Fillets (approx. 4–5), roughly chopped into bite-size chunks
400g Cook by Asda Stir-Fry Veg Mix
170g pack Asda Sweet Chilli Stir Fry Sauce
2 limes, 1 juiced and remaining cut into quarters
200g Asda Frozen for Freshness Green Peas
2 x 250g packs Asda Wholegrain Micro Rice
2 spring onions, finely sliced
Heat the oil in a non-stick frying pan over a medium-high heat. Add the chicken, stirring frequently and cook for 6–8 mins until golden.
Add the stir-fry veggies and cook for 4–5 mins, then add the sauce and lime juice and stir for another 2–3 mins until the chicken is cooked through and everything is combined and coated in the sauce.
Meanwhile, cook the peas and rice in the microwave according to pack instructions, then combine.
Spoon the rice into bowls followed by the chicken and veg. Serve with the spring onions and squeeze the lime quarters over the rice to finish.
