**Sizzled Beef With Fajita Pasta**

We all love pasta and we all love fajitas, so why not combine the two and try something different with our quick-cook beef strips – they’re a great time-saver in a whole variety of recipes.

Ingredients

  • 4 tsp Cook by Asda Steak seasoning

  • 300g Asda Tender Beef Stir-Fry Strips

  • 1 tbsp olive oil

  • 250g penne pasta

  • 1 onion, finely sliced

  • 1 red pepper, deseeded and sliced

  • 1 yellow or orange pepper, deseeded and sliced

  • 1 green pepper, deseeded and sliced

  • 2 tsp ground cumin

  • 2 tbsp tomato puree

  • 75g half-fat sour cream, plus optional extra to serve

  • 75g Light mature cheddar, grated


Method

Step 1

­
Bring a large saucepan of water to the boil. Cook the pasta for 8-9 minutes until just tender. Reserve 200ml of the cooking water then drain.

Scatter 3 tsp of the steak seasoning over the beef strips in their pack. Use your hands to toss together until most of the strips are roughly coated. Heat half of the oil in a large non-stick frying pan over a high heat then add the beef strips and fry for 2-3 mins until browned. Scoop out of the pan onto a plate.

Step 3

Lower the heat under the frying pan slightly and add remaining oil, onion and seasoning, plus a few tablespoons of water. Fry for 2 minutes, stirring – the water will bubble and help un-stick all the yummy steak bits. Add the sliced peppers and fry for 4-5 minutes more together, or until soft and starting to colour. Stir in the cumin and remaining teaspoon of steak seasoning, followed by the tomato puree.

Step 4

Slowly stir in the reserved 200ml of pasta water, then return the beef strips. Let the sauce bubble for 2 minutes while occasionally stirring, then season again and stir in the pasta to heat through. Turn off the heat, add the sour cream and stir everything to combine. Serve in pasta bowls, topped with the cheddar plus a dollop more sour cream, if you like.

Joe’s Tip: 3 children in your family? Just cook an extra 50g of pasta – the sauce is generous and needs no increase.
