Ingredients

Ice cubes

16 blueberries

16 raspberries

12 strawberries, green tops removed

50g soft brown sugar

Handful of mint leaves, plus extra to decorate

Juice of 2 limes

200ml white rum

Soda water

Method

Put some ice cubes in a clean towel and bash with a rolling pin until they're roughly crushed (or crush them in a processor if you have one powerful enough).

Divide the berries, sugar and mint between 4 tall glasses. Add a handful of crushed ice to each. Stir vigorously using the handle of a wooden spoon until the ice has melted by one-third and the berries are mushy.

Add the lime juice and white rum. Mix again. Add some more ice so that the glasses are half full. Top up with soda water, stir and serve immediately.
