Ingredients

4 tbsp fresh lemon juice

1 tbsp clear honey

1 tbsp light soy sauce

2 tbsp olive oil

1 garlic clove, finely chopped

4 chicken breast fillets

2 bay leaves

Method

Whisk together lemon juice, honey, soy sauce, olive oil and garlic. Season and put in a non-metallic dish. Cut chicken breast fillets into bite-sized pieces and turn in the marinade to coat all the pieces. Tuck bay leaves in the tray. Cover and marinate in the fridge for 1 hour, turning occasionally.

Meanwhile, soak 8 wooden skewers in water for 10 minutes.

Thread the chicken and some bay leaves onto skewers and put a wedge of lemon on the end. Barbecue for 5 minutes each side or until cooked through.
