Ingredients

125g butter, softened

125g caster sugar

2 large eggs

125g self-raising flour

1 level tsp baking powder

250g Silver Spoon Royal Icing Sugar

Asda Marshmallows

10 pretzels, halved

1 x 500g pack Dr Oetker Regal-Ice Coloured Ready-to-Roll Icing

Pre-heat the oven to 180C/Fan 160C/Gas 4. Line a muffin tin with 9 cupcake cases.

Beat the butter, caster sugar, eggs, flour and baking powder until creamy, then spoon into the cases. Bake for about 20 minutes or until the tops spring back when lightly pressed. Cool on a wire rack.

With an electric mixer, beat the royal icing sugar with 40ml water for 4 minutes or until stiff – this will be your snow and 'glue'. Spread most on top of the cakes in a thick layer.

Stick 2 marshmallows together with some of the royal icing, and push pretzel arms into them. Press the snowmen into the royal icing on top of the cakes.

Make eyes, noses, hats and scarves from the coloured Regal-Ice icing and 'glue' on with the royal icing mix.
