Beef casserole with beer

Ingredients

2 tbsp sunflower oil

700g pack Asda Butcher's Selection Slow Cook Stewing Steak

1 large onion, chopped

1 clove garlic, crushed

500ml light ale

1 beef stock cube, crumbled

2 bay leaves

500g carrots, sliced

2 level tbsp cornflour

1 small baguette

1 level tbsp Asda Mild French Mustard

Pre-heat the oven to 150C/130C Fan/Gas 2. Heat 1 tbsp of the oil in a large frying pan and cook the beef, in batches, over a high heat until browned all over. Transfer to a casserole dish, together with any cooking juices.

Heat the rest of the oil in the frying pan, add the onion and cook until soft. Stir in the garlic, cook for 1 minute, then add to the meat.

Heat the light ale in the pan, simmering, then add to the casserole with the stock cube, bay leaves, carrots and 100ml water. Cover and cook in the oven for 2 hours 30 minutes or until the meat is tender.

Mix the cornflour with 3 tbsp cold water and stir it into the casserole. Remove the bay leaves.

Cut the baguette into 6 thick slices, leaving off the ends. Spread thinly with mustard and arrange on top of the meat, pressing each slice in lightly. Return to the oven, uncovered, for 20-30 minutes.
