Ingredients

175g butter

100g caster sugar

1 large egg yolk

Few drops of vanilla extract

250g plain flour

Method

Pre-heat the oven to 180C/160C Fan/Gas 4. Line 2 baking trays with baking paper.

Mix the butter with the caster sugar until blended. Add the egg yolk and a few drops of vanilla extract. Stir in the plain flour until the mixture comes together.

Finish mixing with your hands to make dough. Shape into a shallow block and wrap in cling film. Chill for 20-25 minutes.

Roll out on a lightly floured surface to about 4mm thick. Cut into 2.5 x 8cm fingers.

Transfer to the baking trays and bake for 10-14 minutes until light golden brown.

Leave on the trays for 5 minutes to harden.

Transfer to a wire rack to cool.
