Ingredients

750g Asda Wiltshire Unsmoked Gammon Joint

750g potatoes (peeled weight), cut into even-sized chunks

50g butter

350ml whole milk

2 tbsp Asda Coarse Grain Mustard

25g flour

25g pack curly parsley, chopped

350g Asda Frozen Broad Beans, to serve

Pre-heat the oven to 190C/170C Fan/Gas 5. Put the joint in a pan and cover with cold water. Set a lid on top and bring to the boil. Simmer for 45 minutes.

Put the joint in a roasting tin and cover loosely with foil. Cook for 30 minutes, then rest for 10 minutes.

About 20 minutes before the joint is cooked, boil the potatoes until tender. Drain, return to the pan and stand, uncovered, over a very low heat for 1 minute, to drive off any excess moisture. Mash with 25g butter, 4 tbsp milk and the mustard. Season and keep warm.

Melt the rest of the butter in a small pan. Remove from the heat and stir in the flour. Cook over a low heat, stirring, for 30 seconds. Remove from the heat again and slowly whisk in the rest of the milk. Heat until boiling, whisking all the time. Stir in the chopped parsley and season to taste.

Slice the joint and serve with the parsley sauce, mash and broad beans.
