Ingredients

250g self raising flour

125g butter, cut into small pieces

175g mixed dried fruit

85g caster sugar

50ml milk plus 1 tbsp for the top

Method

Line a baking tray with baking paper. Pre-heat the oven to 190C /170C Fan/Gas 5. Rub the butter into the flour until it resembles breadcrumbs.

Stir in the fruit and sugar and then add the milk to make a soft dough. Pat to an oval about 2cm thick and put on the tray.

Mark the top with a sharp knife to make criss cross lines (these are meant to resemble a pilchard fishing net). Brush with milk. Bake for 30 to 40 minutes or until a skewer inserted in the middle comes out clean.
