Piri piri chicken parcel

Ingredients

1 Chosen by you frozen Chicken Breast Fillet

1 tbsp sunflower oil

1 level tsp Chosen by you Piri Piri Seasoning

1 baking potato, about 225g

1 level tsp smoked paprika

Salad, to serve

Chosen by you Light Mayonnaise, to serve

Method

Pre-heat the oven to 200C/180C Fan/Gas 6. Brush the chicken with 1 tsp oil and put in the middle of a sheet of baking paper. Sprinkle the piri piri seasoning all over the fillet. Fold the paper to make a parcel, with tightly sealed edges but room inside for the air to circulate. Put on one end of a baking tray.

Cut the potato into wedges. Put in a bowl and toss with the paprika and the rest of the oil. Spread the wedges over the other half of the baking tray.

Cook in the oven for 25 minutes. Remove and open the paper parcel, taking care the steam doesn't burn your fingers. Return to the oven and cook for another 10-15 minutes until the chicken and wedges are golden.

Slice the chicken and serve with the wedges, salad and mayonnaise.
