Ingredients

6 Extra Special Reduced Fat Cumberland Sausages

4 eggs, lightly beaten

4 muffins

4 cheese slices

6 cherry tomatoes, sliced

Method

Skin the sausages. Put the meat in a bowl and break it up with a spoon. Divide into 4 portions, then mould each into a patty with a steel food presentation ring (or shape with clean hands). Wrap in cling film and chill.

Dry-fry in a hot nonstick pan for 4 minutes on each side until cooked through.

Heat a nonstick frying pan over a low heat and put the steel rings into it. Pour egg into each one (if you don't have rings, pour onto the pan like mini omelettes) and cook for 2 minutes. Flip and cook for a further minute.

Meanwhile, halve and toast the muffins, then fill with a cheese slice, patty, egg round and tomatoes.
